Low-Carb Zucchini Pizza Bites

A Blast of Flavor Packed Into Bite-sized Keto Friendly Snacks

Don’t you hate the feeling that dieting brings? You know, that feeling of being deprived? I know when people think “low-carb”, they often think “not tasty”. But that’s definitely not the case with these game-changing, flavor-packed zucchini pizza bites. These easy-to-make hot snacks have the power to re-motivate you to keep your eyes on the prize, and if you’re not looking to lose weight, but just hoping to eat healthier, you’ve found the holy grail.

My husband isn’t too picky of an eater, so naturally, he usually enjoys most of my cooking, as does our daughter. My son and I, however, share the same persnickety traits when it comes to food taste as well as texture. So it is a big deal if you ever hear me say, “even my son and I love it!”

This recipe is fantastic for 2 people to have a snack, one person to have a meal or for an entire keto-friendly Super Bowl Party, a game night or any other social event. Just multiply the recipe. And if you’re no pro when it comes to cooking, trust me when I say this is one of my easiest recipes and its actually fairly quick, too. From start to finish, prep time included, you wont even spend 10 minutes in the kitchen (granted your oven heats up fast enough.) Be careful after you set these out, though. If you blink, they’ll be gone!


– 1 medium zucchini, cut into 1/2 thick slices
– 1 Tbsp olive oil
– 2 tsp garlic salt, separated
– 2 tsp dried basil, separated
– 3-6 grape tomatoes, cut into four pieces
– 1/4 cup mozzarella cheese, sliced or shredded
– 6 slices turkey pepperoni
– 1 tsp dried parsley


1.) Turn oven broiler on high and let heat up for roughly 4 minutes. While it heats, coat both sides of each zucchini slice thoroughly in olive oil and line them on a baking sheet. Sprinkle 1 tsp garlic salt and 1 tsp dried basil over the all the slices, only on one side.
2.) Broil in oven for 2 minutes on high.
3.) Remove from oven and flip each sliced zucchini. Sprinkle the remaining spices, 1 tsp garlic salt and 1 tsp dried basil over the all the slices, on the opposite side as before.
4.) Add 2-3 pieces of the grape tomatoes to the top of each slice.
5.) Top with mozzarella cheese, then the pepperoni.
6.) Sprinkle the parsley over top.
7.) Broil in oven for 2 minutes.
8.) Remove from oven and let cool. Plate and serve hot.
